All About Breakfast
Wednesday, May 14, 2014Going home over the weekend, I was hit with a huge shock- suddenly I had to actually cook all of my breakfasts again. With lots of internships and summer jobs starting, here are some of my favorite things for the am taken from online that I have tested out and taken from my own experience. I think the key is night before prep. I have a similar breakfast post here, but hey what can I say, sleeping makes me hungry.
Microwave Eggs and Bacon + English Muffin + Cheese stick A few years ago, I leaned a trick from my uncle about being able to cook eggs in the microwave. Doing this is so much faster (and less messy) than getting pans out. All you need to do is spray some Pam in a bowl and wisk the eggs and a little milk and put them in for a few minutes. You end up with pretty decent, fluffy eggs. You can also cook bacon in the microwave by placing the bacon on a stack of paper towels in a shallow dish. Taking the eggs and bacon out, just add a little salt, pepper and cheddar on a muffin and you're done.
Bisquick + Milk If you are a fan of pancakes like me and don't know what Bisquick is, then you are missing out. It's basically everything you need minus milk (I never use and egg, and it's never failed me) making pancakes more than just a weekend treat.
Ice + 1 Container of Yogurt + OJ+ Frozen Blueberries + Fresh Strawberries After years developing my smoothie method, this has been proven to be the best formula, where you get a smoothie that is not too thick or watery.
Cinnamon Roll Mix + Waffle Iron Perfect for a sweet breakfast treat. All you need to do is literally just take them out of the tube, cut the dough into 1/2 inch thick slices and cook them in a waffle iron.
Frozen Fruit Bars The key is to get a really good popsicle maker and then you just have to throw ingredients into and freeze overnight.
If you have a lot of time the night before, here is a link to a similar recipe for my mom's amazing egg and cheese casserole (growing up I actually hated it and now I can't get enough and demand she make extra for me every brunch). It just needs to be popped into the oven in the morning and is delicious.
