Recipe Wednesday: My Mother's Strawberry Cupcakes

Every year, my mom makes a strawberry cake for our birthday. It's so good and definitely one of my favorite parts of family birthdays. Though my mother claims it's a "secret recipe" she learned from one of her college roommates, she allowed me to share it here. These cupcakes are perfect for summer BBQ's. 

(Also of course, classic move that I forgot to take a photo of the cupcakes at the end...)


Because the cake is from yellow box mix, follow the directions for 24 cupcakes and you're good. 

For the icing, you need 1 pint of heavy whipping cream and a box of jello pudding. Gradually add the box of pudding as you whip the cream into stiff peaks. Make sure you have instant pudding, or the icing will be too watery. 

Beyond that, all you need to do is add a fresh strawberry on top and you're done! (Also keep refrigerated!)
